Serve up this classic Mexican breakfast with a splash of Florida’s Natural Orange Juice.
Ingredients
- 2 tablespoons extra virgin olive oil
- 1 small sweet onion, chopped
- 1 poblano pepper, chopped
- 1 jalapeño, seeded and chopped
- 2 cloves garlic, minced or grated
- 1 teaspoon dried oregano
- 1 can (15 ounce) diced fire roasted tomatoes
- 1/2 cup Florida's Natural Orange Juice
- 1-2 chipotle chiles in adobo
- kosher salt and pepper
- 8 corn tortillas
- 8 eggs
- feta cheese, cilantro, yogurt, and avocado, for serving
Mango Salsa
- 1 mango diced
- 1 jalapeño seeded and chopped
- 1/4 cup fresh cilantro, chopped
- juice from 1 lime
- 1 pinch flaky sea salt
