    Ingredients

    • 2 tablespoons extra virgin olive oil
    • 1 small sweet onion, chopped
    • 1 poblano pepper, chopped
    • 1 jalapeño, seeded and chopped
    • 2 cloves garlic, minced or grated
    • 1 teaspoon dried oregano
    • 1 can (15 ounce) diced fire roasted tomatoes
    • 1/2 cup Florida's Natural Orange Juice
    • 1-2 chipotle chiles in adobo
    • kosher salt and pepper
    • 8 corn tortillas
    • 8 eggs
    • feta cheese, cilantro, yogurt, and avocado, for serving

    Mango Salsa

    • 1 mango diced
    • 1 jalapeño seeded and chopped
    • 1/4 cup fresh cilantro, chopped
    • juice from 1 lime
    • 1 pinch flaky sea salt
