- 4 red beets, cubed
- 2 large red onions, cubed
- 1 pound butternut squash, cubed
- 6 ounces fresh spinach
- 4 tablespoon olive oil divided
- 8 ounces goat cheese
- 2 tablespoons maple syrup
- 1 teaspoon Celtic salt
- 1/2 teaspoon black pepper
For the dressing
- 1/2 cups Florida's Natural® Orange Juice
- 1/4 cup olive oil
- 3 tablespoons raw honey
- 2 tablespoons rice vinegar
